Cajun-Moroccan Chicken with Apricot Rice

  • 1 teaspoon ground cinnamon

Instructions

  1. In a medium bowl, combine the chicken chunks with the Cajun seasoning and mix to combine.
  2. Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5 minutes, stirring occasionally, until the chicken is cooked through.
  3. Remove the chicken from the skillet and set aside. Add the rice and dried apricots to the skillet and cook for 1 minute, stirring constantly.
  4. Add the vegetable broth, ras el hanout, cinnamon, ginger, and nutmeg to the skillet and stir to combine. Bring the mixture to a boil, reduce the heat to low, cover, and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.
  5. Return the cooked chicken to the skillet and stir to combine. Cook for 3-4 minutes, until the chicken is heated through.
  6. Serve the Cajun-Moroccan Chicken with Apricot Rice warm.
